Turkish delight is usually a floral flavored jelly candy. This one is neroli & orange. I am hoping to make a rose & pomegranate one this afternoon.
Not a traditional recipe, (which is tricky) but a stable one cause of the use of geltain.

Ingredients:
3 env unflavoured gelatin
2 cup Sugar
1 cup Water
1/2 tsp Good rose flavouring
Red food colouring
1/2 cup Icing sugar, or more, mixed with
1/1 cup Corn starch, or more
Method:
Bring gelatin, sugar, and water to boil, then simmer for 20 minutes. Add rose flavouring and a few drops of colouring. Strain into buttered pan and chill 24 hours.
Turn out onto slab covered with 1/2 icing sugar mixed with 1/2 cornstarch.
Cut into 1′ squares, being careful not to let them touch each other (or they stick!). Roll each in sugar mix, and pack in an air-tight tin with remainder of sugar mix.
